Lemon Garlic Hummus
This lemon garlic hummus makes the perfect healthy snack or vegetarian party hors d'oeuvre. It's the perfect complement to a spread of meaty hors d'oeuvres and it's a crowd pleaser!

2 15 oz cans chick peas 3 large garlic cloves 2 large lemons (juice) 2 tbsp cashew butter 1 tsp salt more to taste 3 tbsp olive oil Toppings 4 oz feta cheese crumbled 1 tbsp olive oil Dippers 1 bag pita chips red pepper cucumbers carrots
Drain and rinse the chick peas. Add them to the food processor and pulse several times until the chick peas are finely chopped.
Add the garlic cloves and pulse several more times until they are blended with the chick peas.
Add the lemon juice, cashew butter and salt and blend until fully incorporated. At this point, the mixture should appear smooth and thick.
With the food processor running, slowly add the olive oil until it is fully incorporated. This will thin the mixture and create a silky texture.
Top with additional olive oil and feta cheese.
Serve with pita chips, crackers or veggie slices.
