My daughter, Meghan, recently was home for a visit and whipped up a batch of this homemade lemon garlic hummus recipe for a family gathering. I thought it would make a great addition to a Super Bowl party spread and asked her to write down the recipe. Meghan’s thoughts and recipe follow:

There are some things that are just better when they are homemade. Hummus is one of those things. It is super easy to make and the payoff is worth it. I started making my own lemon hummus garlic recipe because the store-bought variety gives me terrible heartburn. I struggle with preservatives, particularly citric acid, and most of the big brands use it to keep their product shelf stable.


Great for vegetarian guests and will please all
This recipe makes a great healthy snack or party hors d’oeuvre. If you’re looking for something to add to your snack buffet or take to a Super Bowl party, this is a quick option that will still impress. My sister is a vegetarian and there’s often very little for her to eat when the spread is full of chicken wings and pigs-in-a-blanket. I love that this is vegetarian but still a real crowd pleaser!
Use the right tools when possible
You will need a full-size food processor for this recipe. If you’re just making it to have on hand at home, you can halve the recipe and use a handy mini food processor. If you don’t have one, a food processor is a great investment. I use mine at least once a week. It’s great for biscuits, pastry and thin slicing vegetables (no fancy knife work required).


Add some dippers and serve in a pretty bowl
I like to top my hummus with a little bit of olive oil and crumbled feta. This is a great opportunity to use that fancy olive oil that you have on hand from the gift basket your boss got you for Christmas. I also like to buy feta in a block and crumble it myself (my favorite is Boar’s Head). It’s so much creamier than the pre-crumbled version. Sliced veggies (think red peppers, cucumbers or carrots) are great as dippers, but you can also just pick up a bag of pita chips if you want to cut down on your pre-game prep!

Lemon Garlic Hummus
Equipment
- Food Processor
Ingredients
- 2 15 oz cans chick peas
- 3 large garlic cloves
- 2 large lemons (juice)
- 2 tbsp cashew butter
- 1 tsp salt more to taste
- 3 tbsp olive oil
Toppings
- 4 oz feta cheese crumbled
- 1 tbsp olive oil
Dippers
- 1 bag pita chips
- red pepper
- cucumbers
- carrots
Instructions
- Drain and rinse the chick peas. Add them to the food processor and pulse several times until the chick peas are finely chopped.
- Add the garlic cloves and pulse several more times until they are blended with the chick peas.
- Add the lemon juice, cashew butter and salt and blend until fully incorporated. At this point, the mixture should appear smooth and thick.
- With the food processor running, slowly add the olive oil until it is fully incorporated. This will thin the mixture and create a silky texture.
- Top with additional olive oil and feta cheese.
- Serve with pita chips, crackers or veggie slices.
